Dedicated Outdoor Air System for Commercial Kitchen Ventilation.
The article presents a comparison study of two commercial kitchen ventilation (CKV) systems. One employed a makeup air (MUA) system and a rooftop unit (RTU) for separately heating and cooling the kitchen, and the other included a direct outdoor air (DOA) unit providing replacement air for the kitchen hood and controlling kitchen comfort. The latter system was found to save money by moving less air with the DOA unit. The system with the MUA system used about a third more power in the months of July and August.
